How It Works:
Prep: Fill the liquid tray with water (plus optional herbs for aromatics). This helps with moisture and flavor while catching drippings.
Ignite: Start a small fire in each firebox using charcoal and dry wood. Close the side lids once burning to protect the smoker walls.
Cook: Regulate the chimney damper to control airflow and temperature. Add wood chips or chunks to create smoke as needed. Open damper fully during normal cooking, and adjust to ¼ open for smoking.
Finish: For golden, crispy finishes, raise the temperature at the end of cooking by adding more fuel.
